Sweet peas, snow peas and feta cheese salad

Even though you can make this all year round, this recipe has “Spring” written all over it!
Omit the feta and you have a super refreshing vegan salad as well.

INGREDIENTS

Serves 6-8 people

• 25 oz Sweet peas (frozen)
• 8 oz Snow peas (fresh)
• ½ cup Leeks
• 1 clove Garlic
• ½ cup Mint (fresh)
• 1 ea Lemon (or lime) zest and juice
• 10 oz Feta cheese (preferably in brine)
• ½ cup Extra virgin olive oil
• Salt and pepper
