INGREDIENTS
• 200g = 7oz Unbleached All Purpose Flour
• 52g = 1.83oz Soy flour *
• 1.5g = ¼ tsp Baking soda
• 1 T Cinnamon, ground
• 1tsp Ginger, ground
• ½ tsp Nutmeg, ground
• ½ tsp Allspice, ground
• ½ tsp Cardamom, ground
• ¼ tsp Cloves, ground

• 150g = ¾ cup Sugar
• 2.5g = ½ tsp Kosher salt
• 100g = 3.5oz Brown sugar syrup**
• 140g = 5oz Vegetable shortening
*Soy flour: You can order it online but if you can’t find it, try replacing half of it with whole-wheat flour and half with cornstarch.**Brown sugar syrup: You can buy it but if you can’t find it, here’s the recipe for a homemade one:
• 200g Dark brown sugar
• 113g water
• 20g Light corn syrupCOOKIE BUTTER
If you would like to turn the cookies into cookie butter:
• 320g = 11oz Cookies
• 50g = 1.7oz Coconut oil (or Canola oil)
• 58g = 2oz Water
• 50g = 1.7oz Brown sugar syrup (or honey)
• 1 tsp Spice mix from the recipe
