Sgroppino

Sgroppino is a traditional and festive Italian drink made with lemon sorbet, vodka and Prosecco.

INGREDIENTS

LEMON SORBET
• 50g "Lemon 50" by Disaronno Ingredients #5094
• 325g sugar
• 1000g water
• 20g Fibrina by Disaronno Ingredients #196832 (optional)

SGROPPINO
• 1 oz scoop Lemon sorbet
• 1/2 oz Vodka
• Top it off with Prosecco
• Lemon rind to decorate

PROCEDURE

  • To make the sorbet, simple immersion blend all ingredients together, let it rest for 5-10 min. and churn. Place immediately in your freezer or blast freezer if you have one.
  • To make the Sgroppino, simply mix lemon sorbet and vodka in your glass and top it off with Prosecco.
  • Give it a swirl and decorate with a lemon rind &/or sugar around the rim of the glass.
  • You can obviously make this with a store-bought lemon sorbet of your choice.

If you’re entertaining, you can also combine the sorbet and vodka in a pitcher, mix well and then top it off with the Prosecco. It will be easier to serve. Cheers!
