Let’s cheer and toast to a better New Year with this bubbly drink with pomegranates representing abundance, Benedictine liqueur and festive Champagne!
Yield: this recipe is per drink, so just multiply according to how many you’d like to do.
• 1 oz Bénédictine Liqueur
• 1 oz Pomegranate simple syrup
• Champagne to top it off (about 2.5 oz)
• Pomegranate seeds or arils to sprinkle on topPOMEGRANATE SIMPLE SYRUP
• 1 cup Pomegranate juice
• 1 cup sugar
POMEGRANATE SIMPLE SYRUP
Place the pomegranate juice and sugar in a small pot and bring to a boil for three minutes.
Turn off the heat and let cool completely.
Store in the refrigerator. The syrup will become thick as it cools and should be used cold for the drink.
Add the pomegranate syrup on the bottom of your champagne flute.
Then pour in the Bénédictine Liqueur and finally, top it off with some VERY COLD Champagne.
You can also use Prosecco or your favorite sparkling wine.
Sprinkle some pomegranate seeds inside for some fun fizz and crunch.
