Poached eggs over arugula and roasted peppers

This is the recipe for the salad I made on my YouTube Video “How to poach eggs.” You can find the ingredients and procedure here but you can also check out the video for a complete tutorial on poaching techniques.

INGREDIENTS

POACHED EGG:

• 8 cups of water (almost 2 Liters)
• 1 Tablespoon of salt
• 1.5 to 2 cups of white wine vinegar
• fresh eggs
SALAD

• 3 Bell peppers (red or orange)
• ½ Red onion
• Arugula (or your favorite greens)
• ½ Lemon
• Extra virgin olive oil
• Salt and black pepper
