Pintxo with Chorizo, red pepper sauce and caramelized-pickled onions

“Pintxo” is “Vasco” for toothpick and “Vasco” (Basque) is the language spoken, other than Spanish, in many places in the North of Spain. A “pintxo” or “pincho” in this case is simply a piece of bread with a topping held by a toothpick and you find an endless variety of these delicious bites on all bars in Spain together with Tapas which you can have with a beer or your drink of choice. This pintxo is delicious and perfect for any gathering or happy hour.

INGREDIENTS

x3 Chorizos (or sausage of your liking)
• 1 large red onion
• ½ c Apple cider vinegar
• 1 small Baguette
• Black pepper to taste
• Toothpicks for each slice

Red Pepper Sauce

• 3c = 600g Extra virgin olive oil
• 1lb = 454g Red bell peppers
• 1 tsp Salt (or to taste)
