Mamama’s Cannellini beans and Potato Salad

Mamama was my maternal grandmother and the best cook I have ever known. She used to make this side dish almost every time we had a “parrillada” or BBQ at home. This dish is super delicious and simple and definitely not your usual bean and potato salad. This is also the third of my Hotel Room Dishes and you can watch my IGTV for the procedure.

INGREDIENTS

Yield: 2-3 people

• 13.4oz = 380g = 1 ½ cups Cannellini beans (canned, no salt added)
• 3 Red skin potatoes
• 4 Hard-boiled eggs
• ¼ cup Italian parsley (also named “flat-leaf”), chopped
• 1 T. Dijon mustard
• 1/3 cup Extra virgin olive oil
• 1 tsp Kosher salt (or your favorite salt)
• ½ tsp Black pepper, ground
