Herby Cauliflower “Grits” with Tomato condiment and Fresh Mozzarella cheese

Here’s another recipe from the dishes I made while in a hotel room. A delicious and super quick take on grits with creamy mozzarella, fresh herbs and cooked leftover tomatoes. Check out my Instagram for the IGTV where I show you how to put it together.

INGREDIENTS

Yield: 2 people or 1 hungry girl stuck in a hotel room ☺

• 1lb = 454g Riced cauliflower in a microwaveable bag
• 1 cup chopped tomatoes
• ½ shallot
• ½ of a mixture of your favorite herbs such as parsley, chives, basil and mint
• ½ Fresh Mozzarella cheese
• Extra virgin olive oil
• Salt and black pepper to taste

PROCEDURE

1. Pierce the bag of the cauliflower and cook in the microwave for four minutes or follow the packaging instructions. Let it steam in the bag for a few minutes before opening.
2. Chop you favorite herb or mixture of herbs and place in a bowl.
3. Add the cooked cauliflower to the bowl, mix with the herbs and season to taste with some evoo, salt and pepper. You could also add some lemon zest to brighten it up.
4. If you are making this dish in your kitchen and you have a stove available then sauté the shallots for a few minutes with some evoo. Add the tomatoes and season with salt and pepper. Cook until some of the water from the tomatoes has evaporated and it all becomes a nice sauce.
5. If instead you only have a microwave like I had at that time, then place the shallots and tomatoes in a microwaveable container and cook on high for about four minutes. Be careful that it doesn’t overflow, as it will begin to boil. Season with evoo, salt and pepper.
6. Add the tomato condiment or sauce on top of the riced cauliflower and reheat everything in the microwave if need be.
7. Top it all off with some delicious mozzarella cheese.

Drizzle some more evoo on top and serve with crusty bread.
