Healthy avocado toast with shrimp in “pink sauce”

This recipe is the much healthier version of an old classic where shrimp in pink sauce (mayo+ketchup) was served over half an avocado. It is delicious but quite caloric so I have swapped the mayo for Greek yogurt and the ketchup for beets. It makes a beautiful and delicious sauce that it is also good for you!

INGREDIENTS

PINK SAUCE*:

• 55g = 2oz roasted beets
• 200g = 7oz Greek yogurt 2% fat
• 1 ½ tsp lime (or lemon) juice
• ½ tsp salt
• ½ tsp black pepper

TOAST:

Yield: 4 toasts
• 12 large shrimp, peeled and deveined
• 1 Hass avocado
• Your favorite whole grain bread, thinly sliced and toasted
• Pomegranate seeds
• Evoo
• Salt and pepper to drizzle on top

The pomegranate seeds, evoo, avocado and beets are fantastic and super healthy ingredients packed with good fats, antioxidants and vitamins. Enjoy this delicious dish knowing that it is also very good for you!
