Marmalade

This sweet and slightly sour chunky marmalade celebrates the wonderful flavors and textures of fresh seasonal figs and kicks it up a notch with the addition of shallots becoming the perfect accompaniment to gooey melted cheese, prosciutto or a slice of crusty bread.

INGREDIENTS

Yield: a bit more than a pound
or almost 500g:


• 7oz = 200g Shallots (about 5 ea)
• 3.5oz = 100g Red wine
• 2 oz = 57g or Balsamic vinegar
• 1/8 tsp = 1g White pepper ground
• 4 Juniper berries
• 2 All spice
• 2 oz = 57g Sugar
• 14oz = 400g Fresh figs, chopped

Another delicious option is to add prosciutto instead of the cheese….or simply eat the marmalade over crusty bread!
