Bruschetta My Way

This is basically how I like my pizza but on crusty ciabatta bread instead. It has
stracciatella cheese, roasted AND fresh tomatoes, anchovies and a touch of basil. This cannot be simpler or more tasty!


Yield: about 6 bruschette

• 3 cups cherry tomatoes
• 1lb = 454g Stracciatella (or Burrata)
• Anchovies as many as you’d like
• ¼ cup Extra virgin olive oil
• Salt and pepper
• Corse salt like Maldon Salt
• Ciabatta or your favorite bread (about 6 slices)
• Basil leaves


Serve with fresh basil leaves, a drizzle of evoo and a sprinkle of Maldon salt
