Açai bowls are still super popular so how about mixing some raspberries with açai pulp to make a beautiful fruity breakfast or refreshing afternoon treat? I love it and I’m sure your customers will love it more!
• 260g Açai pulp (frozen)
• 260g Raspberry pulp
• 255g Water
• 160g Sugar
• 25g Dextrose
• 35g Base for fruit sorbets*
• 5g Coconut oil
To make the sorbet, combine all dry ingredients together in a bowl and mix them a bit.
Combine the two fruits (room temp or cold) and the water in a pitcher.
Immersion blend the dry into the wet ingredients and mix for at least one minute.
Drizzle in the coconut oil and mix at least for another 30 seconds.
Blast freeze for about 3-5 minutes or place directly in your freezer.
*the fruit based used is Base 50 All Natural Veg #4078 by Disaronno Ingredients.
Serve as an Açai Bowl with your favorite fruits and toppings or simply as a refreshing sorbet.
